i keep getting put in EU servers against people who are 100x better than me

As @illgot said, the real problem is the lack of available players for the matchmaker. Out of 40 opposing factions players, probably less than half is Ready at any given time. Having to pick teams from a small pool of high skill disparity cannot create even matches every time.
